Fettuccine with Lemon Garlic Shrimp

This delicious and easy thirty minute meal is sure to impress. The freshness of the lemon and butteriness of the shrimp are a perfect match!

Ingredients

  • 1 tablespoon kosher salt, plus 1 1/2 teaspoons
  • 3/4 pound linguine
  • 3 tablespoons unsalted butter
  • 2 1/2 tablespoons olive oil
  • 1 1/2 tablespoons minced garlic (4 cloves)
  • 1 pound large shrimp (about 16 shrimp), peeled and deveined
  • 1/4 teaspoon freshly ground black pepper
  • 1/3 cup chopped fresh parsley leaves
  • 1/2 lemon, zest grated
  • juice of 2 lemons
  • 1/8 teaspoon hot red pepper flakes

Instructions

  1. Bring a large pot of salted water to a boil, add one tablespoon of salt and the fettuccine. Cook according to package directions. (7-10 minutes)
  2. In another large pan, melt butter and olive oil over medium-low heat. Add garlic and cook for one minute, careful not to burn. Add the shrimp, 1 1/2 teaspoons of salt, pepper, saute shrimp for 5 minutes, or until the turn pink. Stir often.
  3. Take the pan off the heat, add parsley, lemon zest, lemon juice, and red pepper flakes. Toss to combine.
  4. Drain the cooked fettuccine and put back into the pot. Add the shrimp an sauce, toss well, serve.
